Ingredients
For the Loaf
- 1½ cups all-purpose flour
- 1 tsp baking powder
- ¼ tsp salt
- ½ cup unsalted butter, softened
- 4 oz cream cheese, softened
- ¾ cup sugar
- 2 eggs
- 1 tsp vanilla extract
- ½ cup milk
- ¾ cup fresh blueberries
- ¾ cup fresh raspberries
Optional Glaze
- ½ cup powdered sugar
- 1–2 tbsp milk or lemon juice
Instructions
- Preheat oven to 350°F (175°C). Grease and line a loaf pan with parchment paper.
- In a bowl, whisk together flour, baking powder, and salt.
- In another large bowl, beat butter, cream cheese, and sugar until light and creamy.
- Add eggs one at a time, then mix in vanilla extract.
- Gradually add dry ingredients and milk, mixing until just combined.
- Gently fold in blueberries and raspberries.
- Pour batter into the prepared loaf pan and spread evenly.
- Bake for 50–60 minutes or until a toothpick inserted in the center comes out clean.
- Let cool completely before adding glaze.
- For the glaze, mix powdered sugar with milk or lemon juice and drizzle over the loaf.
