Perform a series of stretch and folds every 30 minutes for 2 hours (4 sets total). During the second set of folds, gently add the chocolate chips and distribute them evenly throughout the dough.

Step 4: Bulk Fermentation

Cover the bowl and allow the dough to ferment at room temperature for 4–6 hours, or until it has increased in volume by about 50%.

Step 5: Shape the Dough

Turn the dough onto a lightly floured surface and shape it into a round or oval loaf. Place it seam-side up in a floured proofing basket.

Step 6: Final Proof

Cover and refrigerate for 8–12 hours for a cold proof.

Step 7: Bake

Preheat the oven to 230°C (450°F) with a Dutch oven inside. Carefully transfer the dough onto parchment paper, score the top, and place it into the hot Dutch oven.

Bake:

  • 20 minutes with the lid on
  • 20–25 minutes with the lid off
