Churro Sourdough Cookie Ice Cream Sandwich

Crispy Cinnamon-Sugar Cookies + Creamy Ice Cream + Rich Chocolate Drizzle 😍

This dessert is a next-level fusion: churro-style cookies made with sourdough discard, filled with ice cream, and finished with melted chocolate. Crispy on the outside, soft in the center, cold and creamy inside—pure indulgence.

🧾 Ingredients

For Churro Sourdough Cookies

  • ½ cup (120g) sourdough discard (unfed)
  • ½ cup (115g) butter, softened
  • ¾ cup (150g) sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1¾ cups (220g) all-purpose flour
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp cinnamon

Cinnamon Sugar Coating

  • ½ cup sugar
  • 1½ tbsp cinnamon
  • 2 tbsp melted butter (for brushing)

Filling

  • Vanilla ice cream (or any flavor you like: chocolate, strawberry, caramel, etc.)

Chocolate Drizzle

  • 100g dark or milk chocolate
  • 2 tbsp cream or milk
  • 1 tsp butter (for shine)

👨‍🍳 Instructions

Step 1: Make Cookie Dough

In a bowl, cream together:

  • Butter + sugar
    Mix until light and fluffy.

Add:

  • Egg
  • Vanilla
  • Sourdough discard

Mix well until smooth.


Step 2: Dry Ingredients

In another bowl, mix:

  • Flour
  • Baking soda
  • Salt
  • Cinnamon

Gradually add dry ingredients into wet mixture.

Mix until soft cookie dough forms.

Cover and chill for 30–45 minutes.


Step 3: Shape Cookies

Preheat oven to 175°C (350°F).

Scoop dough into medium balls and slightly flatten them.

Place on baking tray lined with parchment paper.

Bake for 10–12 minutes until edges are lightly golden.

Do NOT overbake (you want soft centers).


Step 4: Churro Coating

While cookies are still warm:

Brush lightly with melted butter.

Roll each cookie in cinnamon sugar mix until fully coated.

Let them cool completely.


Step 5: Make Ice Cream Sandwiches

Take one cookie:

  • Add a scoop of ice cream
  • Top with another cookie
  • Gently press

Place sandwiches in freezer for 30–60 minutes to set.


Step 6: Chocolate Drizzle 🍫

Melt chocolate with cream and butter until smooth.

Drizzle over frozen cookie sandwiches.

Optional: sprinkle extra cinnamon sugar on top.
