Pink Marshmallows

Homemade Soft, fluffy, and lightly vanilla-flavored marshmallows with a pretty pink color — great for gifts, hot chocolate, or desserts.

Ingredients

For the Marshmallows

  • 3 packets unflavored gelatin (about 21 g)
  • 1 cup cold water, divided
  • 1½ cups granulated sugar
  • 1 cup light corn syrup
  • ¼ tsp salt
  • 2 tsp vanilla extract
  • Pink food coloring (gel works best)

For Dusting

  • ½ cup powdered sugar
  • ½ cup cornstarch

Instructions

1. Prepare the Pan

Lightly grease an 8×8-inch baking pan.
Mix powdered sugar and cornstarch together, then dust the pan generously.

2. Bloom the Gelatin

Pour ½ cup cold water into the bowl of a stand mixer.
Sprinkle gelatin over the water and let sit for 10 minutes.

3. Make the Syrup

In a saucepan, combine:

  • remaining ½ cup water
  • sugar
  • corn syrup
  • salt

Cook over medium heat until sugar dissolves.
Increase heat and boil until mixture reaches 240°F (115°C).

4. Whip the Marshmallow

Turn mixer on low and slowly pour hot syrup into the gelatin.

Increase speed to high and whip for 10–12 minutes until thick, glossy, and fluffy.

Add:

  • vanilla extract
  • a few drops of pink food coloring

Mix until evenly colored.

5. Set the Marshmallows

Spread mixture into prepared pan using a greased spatula.

Dust top with more sugar-cornstarch mixture.

Let sit uncovered for at least 6 hours or overnight.

6. Cut and Coat

Turn marshmallows onto a cutting board.
Cut into squares using a greased knife or pizza cutter.

Coat all sides in remaining sugar-cornstarch mixture.


Storage

Store in an airtight container at room temperature for up to 2 weeks.
