High-Protein Chicken & Veggie Soup

I’ve been focusing on high-protein meals for the last 5 weeks and I’m down 23.2 lbs! Meals like this soup keep me full, support muscle growth, and help control cravings while staying super low in points.

Ingredients

  • 2 chicken breasts, cooked and shredded
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 zucchini, diced
  • 4 cups low-sodium chicken broth
  • 1 can diced tomatoes
  • 1 cup spinach
  • 1 tsp Italian seasoning
  • Salt & pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, then sauté until fragrant.
  3. Stir in carrots, celery, and zucchini. Cook for 5 minutes.
  4. Pour in chicken broth and diced tomatoes. Bring to a boil.
  5. Add shredded chicken, Italian seasoning, salt, and pepper.
  6. Reduce heat and simmer for 15–20 minutes.
  7. Stir in spinach and cook for another 2 minutes.
  8. Serve hot and enjoy!
